What makes a seafood restaurant particularly noteworthy? The freshest fish, shellfish and crustaceans, of course, gently prepared (which, considering most kitchens' penchant for overcooking, apparently isn't as easy as one would think). Also, a degree of the unexpected, and a staff ready, willing and able to carry out the mission.

Your basic fried fish, for example, is generally pretty much acceptable and accessible, but "basic" is the problem, the fish damned by the contempt that comes with familiarity. Not so familiar are the fish dishes on this menu -- which is a particularly good thing, considering that entrees generally run in the $40-and-up range. Yes, you'll pay big, but you're not likely to encounter something you saw just last week, unless you were at restaurant rm just last week.
